Fruit Salad

Fruit Salad - preparation time 1 hr
My husband like fruit salad very much so when I got married and came I started preparing this dish. In my mom's place I used to prepare ice creams. Sure all your family members especially kids love and like this fruit salad very much. It is an healthy way to make kids eat fruits.
 
You can make this salad with the fruits you like. Make sure you use hard and non watery fruits (avoid melon fruits)

Ingredients:-
Apple - 2
Orange - 2
Mosambi - 1
Pomegranate - 1
Honey - 2 tbsp
Vanilla Custard powder - 2 tbsp
Milk - 1 cup
Guava - 2 (optional)
Dates - 10 (Remove the seed)
Sugar - 10 tsp (add according to your taste. Some fruit will be very sweet so you can add less sugar)
Ice cream - As required (optional)
 
Preparation method:-
Peel the skin of apple, remove the seeds and chop to small cubes. Sprinkle some sugar over the apple cube to avoid oxidation.
Take the flesh or orange and mosambi . Make to small pieces
Remove the pomegranate seeds or pods.
In a pan boil the milk and bring to room temperature. Mix custard powder with water or warm milk and add to boiled milk.
Heat the milk, sugar and custard mixture. Bring to boil and switch of the flame. It will become thick. Cool the mixture.
Mix all the fruits in a bowl along with chopped dates. Add the custard milk and mix with the fruit.
Refrigerate and when cool serve along with honey and ice cream.
Very delicious and healthy sweet is ready.

Note:-
You can add sweet seedless Grapes, Guava, banana, pineapple, papaya if you like these fruits.

Mangai ingi salad (Galangal salad)

Mangai ingi salad - Preparation time 5 mins
This is seasonal usually we will get more dring year end. If will be like ginger but will contain little taste of mango also. Goes well with curd rice. Simple to make.

Ingredients:-
Mangai ingi - chopped finely 1 cup (Wash well and remove the skin part. Chop to small cubes)
Lemon juice - 2 tsp
Salt - to taste
Mustard - 1/4 tsp (optional)
Sesame oil - 1/4 tsp (optional)

Preparation method:-
In serving bowl mix chopped mangai ingi, lemon juice and salt. Mix well and check the taste.
You can serve this with curd rice. It will taste good after few hours because it will absorb the essence into mangai ingi.
If you want you can garnish. Heat oil, add mustard to splutter and garnish the mangai ingi.

Carrot salad

Carrot salad - preparation time 5 mins
Carrot is good for eyes when consumed raw. This salad is made of raw carrot along with lemon juice which is rich in vitamin C

Ingredients:-
Carrot – 1 cup (finely grated)
Mustard – ¼ tsp
Green chili – 1 (finely chopped)
Oil – ¼ tsp
Lemon juice – 1 tspn
Salt – to taste
Coriander leaf – 1 tbspn (finely chopped)


Preparation method:-
Mix carrot, salt, lemon juice, coriander leaf and chili in a bowl. If you want you can fry the chili with mustard and add
In a tawa heat oil & mustard. Add this to salad and serve.

Mullaikattiya payaru, carrot & cabbage (Sprout & vegetable) salad

Sprout & vegetable salad - preparation time 10 mins
This is the only way to make people consume raw vegetables :-). Ensure that you wash all the vegetables well if you want you can wash in hot water and then peel the skin. It will take 1 day to make mung dhal sprout so you have to plan in advance if you want the salad to be protein rich. It will have the spicy and tangy taste.

Ingredients:-
Mung dhal sprouts – 1 cup (Refer sprout sundal to make mung dhal sprouts)
Cabbage – finely grated (1/2 cup)
Lemon juice – 1 tsp
Salt – to taste
Green chili – 1 or 2 (finely chopped)
Coriander leaves – 2 tbsp (finely chopped)
Carrot – finely grated (1/2 cup)


Preparation method:
Mix all the above mentioned in a bowl and garnish with coriander leaves.
Sprout salad is very health and rich in protein.
